In many homes the meal is not over until someone breaks a small piece off the gur block in the kitchen. Jaggery blocks are the oldest form of the sweetener, set in moulds while the boiled-down cane juice is still warm.

They come in cubes, round bhelis, buckets and big slabs. Sugarcane jaggery ranges from pale gold to dark brown depending on the cane and the boiling. Date palm jaggery, nolen gur in Bengal, arrives in winter and goes into sandesh and payesh. Palm jaggery from palmyra, karupatti in Tamil Nadu, is darker and earthier.

Colour is not proof of anything on its own, so read the pack: it should name the source, list ingredients and show an FSSAI licence with the maker's details and dates. At home, store blocks in a lidded jar; jaggery left open sweats and softens in the monsoon. A heavy knife or pestle makes breaking it easier.

Frequently Asked Questions

What is nolen gur?
It is jaggery made from date palm sap in Bengal during winter, prized for sandesh, rosogolla and payesh.
How do I break a hard jaggery block?
Use a heavy knife or tap it with a pestle, or grate it. Warming the block slightly also helps.
Why is my jaggery block sticky?
Jaggery absorbs moisture from the air, especially in the rains. Keep it in a closed container.
Is palm jaggery the same as cane jaggery?
No. Palm jaggery is made from palm sap and tastes earthier, while cane jaggery is made from sugarcane juice.
