When a guest steps in from the May heat, many Indian homes still offer a glass of something pink or green before tea is even mentioned. That glass is usually sharbat, poured from a bottle of concentrate and topped up with chilled water.
Rose sharbat is the familiar red one, also swirled into falooda and milk. Khus, from vetiver roots, is green and earthy. Kokum, a Konkan favourite, is deep purple, sweet and sour. Bel sharbat uses wood apple pulp, falsa is tart and berry-like, and nannari, from Indian sarsaparilla root, is a Tamil Nadu summer staple with lemon.
Dilution ratios differ between bottles, so pour according to the label. Read it too for sugar, colours and preservatives, the FSSAI licence and the bottler's name, and the packing and use-by dates. Many concentrates belong in the fridge after opening.
