Fold a spoonful of gulkand into chilled milk on a May afternoon and the whole glass smells of roses. That is how most people meet it in the kitchen, along with the sweet paan where it is tucked inside the leaf.
The method is old and slow. Fresh, fragrant rose petals are layered with sugar in a jar and left, traditionally in the sun, until the sugar dissolves and the petals turn into a soft, dark preserve. Texture ranges from chunky with visible petals to smooth and spreadable.
This section is about gulkand as a food: for desserts, shakes, paan and stuffing in sweets. Check that the label lists rose petals and sweetener plainly and shows an FSSAI licence number, maker's address and dates. Keep the jar closed, away from heat, and use a dry spoon so it does not ferment.
