Instant idli, dosa, upma, pongal, dhokla and poha mixes: traditional Indian breakfasts that need little more than water, a pan and ten or fifteen minutes.

Seven in the morning, lunch boxes to pack, and no idli batter fermenting on the counter. That weekday reality is what breakfast mixes are made for, and many homes now keep two or three packets as a backup.

Instant idli and dosa mixes skip the overnight grinding and fermentation, usually relying on rava or rice flour with a raising agent. Upma and pongal mixes come pre-roasted with spices, so you add boiling water and finish with a tadka. Dhokla and khaman mixes need a steamer or a covered pan. Rava dosa, uttapam, appam and poha-style mixes round out the range.

Each one has its own method, water ratio and resting time printed on the box, and following it closely makes a real difference. Check the ingredients for added salt, sugar or allergens, plus an FSSAI licence, the producer's name and the packing and best-before dates. Fold the pouch tightly or clip it after use.

अक्सर पूछे जाने वाले प्रश्न

Do instant idli mixes need fermentation?
Most instant mixes do not; they use a raising agent and need only a short rest after mixing with water or curd. Follow the time given on the pack.
Why did my dhokla not rise?
Usually the batter was over-mixed, rested too long after adding the raising agent, or the steamer was not hot. The method on the box is worth following exactly.
Can I add vegetables to upma mix?
Yes, many people sauté onion, peas, carrot or beans in the tadka before adding water and the mix.
How should an opened mix be stored?
Seal the pouch tightly or move it to an airtight jar and keep it dry. Use it before the best-before date.
